Shepherd's Pie
serves 4
Ingredients
- 1 1/2 lb mashed potatoes or mashed cauliflower
- 1 C onion, chopped
- 2 ea carrots, peeled and small dice
- 2 ea celery stalks, small dice
- 1 1/2 lb ground lamb or beef
- 2 T all-purpose flour
- 1 C beef broth
- 1 t Worcestershire Sauce
- 2 t fresh rosemary, chopped
- 1 t fresh thyme, chopped
- 1 C corn kernals, cooked
- 1 C peas, cooked
- 2 C cheese, grated
Instructions
- Saute the onion, carrots and celery in oil until softened, then add the meat, season to taste, and cook until browned. Sprinkle the mixture with the flour, toss to coat, and continue cooking another minute.
- Add the broth, Worcestershire, rosemary and thyme, bring to a boil, then simmer until the sauce is slightly thickened. Mix in the corn and peas, then spread evenly into a buttered baking dish.
- Mix 1 C cheese in the potatoes, then spread the potatoes on the meat mixture. Top with the remaining cheese, then bake at 400 for 25 minutes.
- Plate and serve.
